In a pan, heat some oil and add some cumin. Let it simmer till it starts to sputter a little. Next, add onions, curry leaves, and chopped tomatoes. Once the onions are slightly golden, add in some ginger garlic paste and tomato puree, and as you stir, add in some red chilli powder, garam masala, turmeric, salt, and coriander powder. Once everything is cooked well, add in the eggs, and let them fry for 2-3 minutes. Cover the pan and wait for the gravy to thicken. Once traces of oil begin to appear, remove the pan from the flame, and serve.

Make a simple onion and tomato gravy with whole garam masala, and simmer the chicken in the gravy until moist and tender. Temper cumin seeds and red chillies in butter and add to the gravy for maximizing on the richness of this dish.
