A good frappe must be shaken, blended or beaten till it’s frothy and thick. When I hear the words shaken, blended and beaten, I automatically think of the Nutri-blend Smart! Unlike traditional simple syrups that adopt a 1:1 ratio of water and sugar, this recipe is altered to intentionally reduce the sugar content. This allows the syrup to impart more flavour to the coffee without making it overly sweet. It also makes a thinner syrup that’s easily mixed into drinks. Use it to spice up your espresso martinis, hot chocolates or even your regular cup of coffee in the morning. This time of year, it also makes for the perfect gift! It’s an easy to make and thoughtful gift you can give your friends and family for Christmas.
Molasses gives the syrup a more complex flavour that gingerbread syrup is known for. It’s slightly bitter and crucial to the recipe. However, if you can’t get your hands on some, you can still make a stellar syrup with just the muscovado sugar. If even muscovado sugar is hard to get a hold of, try using dark brown sugar. There’s always a substitute available so don’t let one ingredient hold you back!
RECIPE CARD
Makes: ¾ cup of Syrup & 1 Serving of Coffee
Time: 25 minutes active & 1 hour inactive
For the Syrup
1 cup Water
½ cup Muscovado Sugar
3 Tbsp Treacle Molasses
1 Cinnamon Stick
5-6 Allspice berries
5-6 Cloves
5-6 Black Peppercorns
¼ tsp Nutmeg
For the Gingerbread Cold Coffee
½ cup Ice
½ cup Milk
2 tbsp Gingerbread Syrup
2 Shots Espresso (60ml or ¼ cup)
Method:
Gingerbread Syrup
- Place all Ingredients in a heavy bottomed saucepan on medium heat.
- Once the mixture begins to boil, reduce the heat to low and let it simmer for 15 minutes.
- Turn the heat off and allow the syrup to stand and infuse for 1 hour.
- Once cooled, strain and transfer to a clean jar.
Gingerbread Cold Coffee
- Prepare a double shot of espresso in the Regalia 15 Bar Espresso Machine.
- Allow the espresso to cool.
- Add the ice, milk, syrup and cooled espresso to the Nutri-blend Smart Jar and select the smoothie mode.
- Transfer immediately to a large glass and serve.
