There’s nothing like a home cooked meal to kick off your Valentine’s Day celebrations. This recipe is perfect for those who aren’t savvy in the kitchen but would still like to make something special for their loved ones.
Avocado toast has been a brunch (and instagram) staple for too damn long! While I do love them, I think it’s time for a change. Enter my Peas on Toast recipe! Peas and avocados taste very different of course, but It’s got a similar creaminess with bright flavours. This spread is packed with protein and fibre, making it a hearty option to start your day with.
Peas are an underrated gem in the kitchen. They’re naturally sweet, earthy and mild enough to complement rich flavours. They blend up pretty great as well. They’re also so much more affordable than avocados. Perhaps the biggest advantage it has though is that you don’t have to wait for peas to be ‘ready’. I’ve lost way too many avocados to this! It’s not just peas though, this spread stands out with a few additions. Tahini adds depth and creaminess, green chillies bring some heat and mint, because well, there’s nothing like peas and mint! A little lemon, salt and pepper and you’re good to go!
Equipment
We need a food processor for this recipe but lucky for me, I have the Nutri-blend which comes with a food processor attachment! All the convenience with none of the storage issues! This is one of the reasons I love the Nutri-blend. No matter the type you get, you can always expand your attachment collection to include staples like the food processors, dough makers, etc.
Don’t restrict yourself to avocado toast style preparations with this recipe. This pea spread tastes great in a number of ways. It makes for a great layer in a sandwich, just add some lettuce and some chicken for a high protein alternative to high calorie spreads like mayonnaise. You can also top jacket potatoes with spoonfuls of this mix and it makes for a great high protein dip with chips.
This recipe is fresh, creamy, nutritious and just different enough to shake up your breakfast routine without straying too far from what you love!
